PETAL & STEM
Say nothing. Drink well.
21:00 — 03:00 · six nights · never Sundays
No 1 — The Whisper List
Run your glove over a name. The doorman redacts the rest.
Rye washed in brown butter, amaro, a whisper of smoked fig. Stirred until nobody remembers.
Gin, rose from the shop upstairs, lychee, champagne acid. Ask for it and the florist smiles.
Chartreuse, snap peas, lime leaf, flor de caña. The colour of the booths, the mood of the band.
Whatever the bartender is thinking about at the moment you sit down. Price depends on the story you trade.
Cognac, black cherry, bitter walnut, cigar-leaf tincture. Served only after one in the morning.
No 2 — House Rules
The room is candlelit for a reason. What happens at the bar stays beautifully unproven.
First names invented at the door are honoured all night. The doorman has been "Charles" since 1927.
Nothing here is quick — not the stir, not the band, not the goodbye. Last orders are a rumour.
No 3 — Finding Us
Find Petal & Stem, the florist on Greenwood Row that never seems to close.
Ask the florist for the midnight rose. She will point out that roses sleep at night.
Insist, politely. The cooler door at the back is heavier than any cooler needs to be.
Bookings — none taken. Capacity — forty-one, one of whom is the band.
If the rose light above the shop is off, we are not there. We are often not there.
