How it runs

One seating at the bar, 19:30. You watch every plate leave the flame. There is no back kitchen to hide in.

The wood

Holm oak for heat, old vine for perfume, a little apple when the desserts come. Never charcoal from a bag.

Come hungry

Nine courses, two hours, and a smell of woodsmoke in your coat that lasts until Tuesday. Worth it.
